Creamy Chia Seed Tapioca Pudding (Gluten Free/Vegan)


When I was a kid my grandma used to make me tapioca pudding.  It was one of my absolute favorite things...so creamy, sweet, light and delicious :).  Actually, I wouldn't have really modified her recipe that much since tapioca itself is gluten free.  Maybe I would have used almond milk instead of cows milk and honey instead of white sugar, but really, I came upon this chia recipe by accident this afternoon while I was having lunch.  I always mix chia seeds with plain yogurt and after it sits in the fridge over night, the consistency is just like tapioca.  But I decided to try a vegan version tonight and see how it turned out.  Alternatively, just throw a spoon full of chia seeds into whatever kind of yogurt you like, leave it over night in the fridge and in the morning you have a delicious, healthy and energizing snack!

2 cups almond milk
3/4 of a cup chia seeds
2 tbsp honey (or any other sweetener of your choosing)
1 tsp vanilla

Mix all ingredients together and leave in fridge for as long as you can stand it without eating! Enjoy :)

  1. Are you supposed to chew the resulting pudding or do you just swallow the little slightly crunchy bits of seed that don't turn gelatinous. Seriously. I tried this and I like it. Just not sure how to eat it.

    1. I'm not sure of the intricacies of eating tapioca, however, for the maximum nutritional benefit of chia seeds you should chew them as thoroughly as possible. A big part of digesting any food but seeds in particular is mixing the enzymes in your saliva with it. Chewing both the seeds increases the surface area for those enzymes to react and assists in getting past the hard exterior shell.

  2. Cara: Chew away my friend!! I actually really like the texture, and as Don't Go By Me says, it is important to chew the seeds in order to receive the maximum benefits from them. The only problem I find with chia is that you want to mix the seeds with something (as in this recipe, or yogurt, salad etc.) because otherwise they really tend to stick in your teeth...much like a poppy seed! Hope you enjoy :)
